Big Red
This retirement party cake was created to look like his favorite red pickup truck "Big Red". The tile was to represent the garage floor. The truck was make from chocolate. In addition to this I made 200 cupcakes!

Simple Elegant Wedding Cake
Cupcakes have certainly become popular for weddings. All for good reason, easy to make, easy to transport, self serve (no one needed to cut the cake). My daughter had a small but elegant garden wedding.
Cupcakes with flowers were perfect. A small cake for the Bride and Groom can still be made to go on the top of the cake stand. Marzipan roses are yummy and can be made well in advance, to lower last minute stress levels. I found ordering marzipan online fresher and much cheaper than buying local.
Vegan Cupcakes
Many of my friends and family have special diet needs. I have been testing out recipes to be able to make treats everyone can enjoy! In my search I found this wonderful book "Vegan Cupcakes Take Over The World". This chocolate cupcake made from this cookbook is moist and delicious. Can't wait to try the Mucho Margarita Cupcakes and the Chai Latte Cupcakes!

Quinoa Corn Bread
Quinoa is a true super food! It packs a big punch when it comes to nutrition. Very high in protein, containing all eight essential amino acids. It is high in iron, calcium, magnesium, B vitamins and fiber. It can be prepared with vegetables, or fruits. This corn bread is gluten-free, it is crumbly when very hot. Let set 10-15 minutes after removing from the oven, that reduces the crumbling factor considerably.
Quinoa Corn Bread
2 cups corn meal
1 cup quinoa ( before grinding)
1 t salt
1/2 t baking soda
1 1/2 t baking powder
1/4 cup sweetner ( I used 2 T honey plus 2 T agave)
2 eggs
3 T olive oil
2 1/2 cups buttermilk
1-4oz can Ortega fire roasted green chiles
1/2 cup shredded reduced- fat cobly-jack cheese
Preheat oven to 425 degrees
Place quinoa in blender, blend until powder like. Add the other dry ingredients, give the blender a couple of pulses and set aside. Mix the eggs, olive oil, buttermilk and green chiles together. Then blend in dry ingredients. Pour in a greased 9x9 square pan. Sprinkle with cheese. Bake about 30 minutes or until toothpick comes out clean.

I recently, had a baking student with the greatest enthusiasm. The photos will speak for themselves. True pride & joy in the kitchen. We made a red velvet cake!
